Each gold leaf and silver leaf product is made in specific quantities that allow us to carefully scrutinize each step of production.

In the Delicatessen line a bound booklet holds 12 genuine 23 kt edible gold leaves, 5 cm x 5 cm (1.9” x 1.9”) square, each separated by paper interleaves. The Professional line offers a box containing 20 individual booklets of 25 leaves each. Each leaf measures 8 cm x 8 cm (3.2” x 3.2") square for a dramatic effect that is easy to accomplish. The Professional line also offers a box of edible gold leaf contains 20 individual booklets of 12 leaves each. Each leaf measures 5 cm x 5 cm (1.9” x 1.9") square.

For millenia, goldbeaters worked singly or in shops, with a special hammer, to create gold leaf by hand. Today, nearly all goldbeaters have been superceded by computer-based machine beating hammers. goldbeating

This exacting profession, once done always by hand, is now carried on by J.G. Eytzinger Gmbh in its state-of-the-art facilities. Initially, annealing (gradual heating and cooling) increases malleability of gold leaf in the early stages of the process. Actual beating is accomplished by computer-run hammer carousels. The individual is still very much evident: all steps of Crocodile genuine gold leaf production from melting, beating, cutting, shaping and packing are carefully scrutinized by staff, and assigned batch numbers.

Hazard Analysis and Critical Control Points - a system used in the food industry to identify potential food hazards, and to implementation key actions to reduce the ocurrence of these hazards. GoldGourmet genuine edible gold leaf and edible silver leaf products are produced following the guidelines set forth by HACCP.

halal

The term used in the Islamic community to mean lawful or permitted. GoldGourmet products are certifiied halal.

karats

The measurement of purity of gold alloys, where one karat equals 1/24 purity by mass. 24 kt refers to 24/24 purity by mass.

kosher

The term used to indicate adherence to dietary laws within the Jewish community. GoldGourmet products are certifiied kosher.

LGA

Certified itself by the ISO 9001/14001, LGA (Dept of Health) Beteiligungs Gmbh provides certification that food substances adhere to the guidelines of the German Food and Commodities Act. These guidelines set for the two basic principes: food may not endanger consumers’ health, and food presentation and labeling may not by misleading. This is checked by LGA’s experts and laboratory check food substances’ production (using microbiological and chemical testing) packaging, presentation, manufacture and at its physical place of sale to determined continued hygienic handling.

Packaged in books with bound pages of tissue, leaves are inserted loosely so they can be directly pressed from the book onto a surface or more commonly lifted with a brush.

malleability

Refers to gold's ability to be beaten into soft, consistent, thin leaves. Genuine gold leaf can adhere to and wrap a complex or smooth surface and impart a glowing sheen.

Genuine edible gold leaf flakes of a larger size than GoldGourmet Flakes. A famous additive in Gdansk Goldwasser and chocolate.

shelf life

The time within which a product should be consumer or used. GoldGourmet products have a specified "use before" date on their labeling: gold leaf should be used within 6 years, silver leaf within 2 years of manufacture.

shellac

Edible gold leaf can adhere to certain foods that have a food-grade shellac coating.

Schwabach

The home, since 1950, of J.G. Eytzinger Gmbh, located in Germany's Franconia region. A distinct autonomous district, Schwabach is famed for its long history of goldbeating. In 2004 Schwabach celebrated this tradition with its festival "500 years of Gold Leaf".

An excellent tool for creatively and efficiently decorating with edible Gold or Silver Leaf Flakes or Dust. Made of stainless steel, one types has larger holes for Flakes, the other has smaller holes for Dust.
